Water kefir vs kombucha: two sparkling drinks, two personalities
At a glance
Water kefir is a light, fruity, naturally sparkling drink made from sweetened water, fruit and live grains, ready the next day and caffeine-free. Kombucha is a sparkling fermented tea made with a SCOBY, rounder and sharper, ready in about a week and containing some caffeine from the tea. Choose water kefir for an easy daily drink, kombucha if you love tea, or the Natural Probio duo for both.
"Water kefir or kombucha?" is one of the questions we are asked most, usually by someone who has enjoyed a bottle of kombucha from a café and seen water kefir mentioned in the same breath. They are cousins rather than twins. Both are homemade, both are naturally fizzy, both are enjoyed for their taste. Beyond that, they differ in almost every way that matters day to day.
The taste
Water kefir is light and refreshing, with a soft sweetness and a clean, gentle tang. On its own it is quite delicate, which is why it takes flavours so well: lemon and ginger, berries, elderflower, apple and cinnamon. Most people describe it as a homemade lemonade with finer bubbles.
Kombucha has more body. The tea gives it depth and a faint tannic dryness, and it develops a sharper, slightly vinegary edge as it matures. Its flavour depends a lot on the tea you choose, from a mellow black tea to a grassy green. It suits people who drink their tea without much milk and enjoy a grown-up, complex taste.

The rhythm of each
Water kefir lives on a daily loop. You set up the jar, strain it the next day, bottle the drink and put the grains straight back to work. It suits people who like routines and want quick results: if you would like a drier or sweeter drink, you only wait a day to try again.
Kombucha moves more slowly. You brew a jar of sweet tea, add the SCOBY with its liquid, and leave it to develop for about a week before bottling. It asks for less day-to-day attention but more patience, and rewards you with a larger batch at a time. Both routines are explained step by step in the guides that come with each culture.
Caffeine and other practical points
Because kombucha starts from tea, it contains some caffeine (also called theine). Water kefir is made without tea and contains none, which is why some customers choose it for the afternoon and evening. Both drinks, like any homemade fermented drink, contain traces of alcohol, generally under 0.5%. Neither needs special equipment: a large glass jar, a cloth and some swing-top bottles cover both.
Who each one suits
Choose it if…
You want a fruity, fizzy drink ready tomorrow; you are a beginner; you like changing flavours often; you would rather avoid caffeine; you have a family to keep in drinks.
Choose it if…
You love tea; you enjoy deeper, sharper flavours; a weekly routine suits you better than a daily one; you like the idea of experimenting with different teas.
Choose the duo if…
You cannot decide, you share a home with someone who likes the other one, or you want a bottle of something different in the fridge every day.
Why so many people end up with both
Because the two rhythms complement each other so neatly. Water kefir keeps the fridge stocked day by day; kombucha arrives in a bigger batch every week with a completely different character. That is the thinking behind our water kefir and kombucha duo: 30 g of water kefir grains plus a SCOBY in its starting liquid, two guides and a single delivery. And if you would like a creamy milk kefir too, the complete kit includes all three.
Still weighing up the whole range? Which one to choose puts every option side by side.
Questions about water kefir and kombucha
Which is easier for a beginner?
Water kefir, usually. It is ready the next day, so you learn quickly, and the routine is very short. Kombucha is not difficult either; it simply asks for a little more patience.
Can I make both in the same kitchen?
Yes. Keep them in separate jars, a little apart on the worktop, and follow each guide. Plenty of our customers do exactly that.
Which one is fizzier?
Both can be nicely sparkling once bottled. Water kefir tends to give a lighter, livelier fizz; kombucha a softer one. The guides explain how to get the sparkle you like.
Can I use one culture to make the other drink?
No. Water kefir grains and a kombucha SCOBY are different cultures and are not interchangeable.
